1 1/2 cups Yellow Cornmeal
1 cup All-Purpose Flour
1/4 cup Granulated Sugar
1 tablespoon Baking Powder
1/2 teaspoon Salt
1 cup Milk
1/2 cup Vegetable Oil
2 large Eggs
1/4 cup Honey
1 large Jalapeño, seeded and finely minced
Instructions
Preheat your oven to 400 degrees F (200 degrees C). Grease and flour an 8×8 inch baking pan or a 9-inch round cake pan.
In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
In a separate medium bowl, whisk together the milk, oil, and eggs until combined.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix.
Gently fold in the honey and the minced jalapeño.
Pour the batter into your prepared pan.
