Ingredients
Scale
1 large sweet potato, peeled and grated
1 medium apple (like Honeycrisp or Granny Smith), grated
1 tablespoon olive oil or butter
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cinnamon (optional)
Instructions
Grate the sweet potato and apple using a box grater or food processor. Place the grated ingredients in a clean kitchen towel or several layers of paper towels. Squeeze out as much liquid as possible. This step helps achieve crispiness.
Heat the olive oil or butter in a large non-stick skillet over medium heat.
Add the squeezed sweet potato and apple mixture to the hot skillet. Spread it into an even layer.
Cook undisturbed for 5 to 7 minutes until the bottom starts to brown and crisp.
Sprinkle with salt, pepper, and cinnamon, if using.
Flip the hashbrown mixture carefully, breaking it into smaller hash-like pieces if desired, or keep it in one large patty. Cook for another 5 to 7 minutes until the second side is golden brown and the potatoes are tender.
Serve immediately.
Notes
For extra crispiness, press the mixture down firmly with a spatula while cooking the first side.
You can substitute butter with coconut oil for a different flavor profile.
This recipe works well as a side dish for eggs or sausage.
