  • 1 large yellow onion, chopped

  • 2 cloves garlic, minced

  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can tomato sauce
  • 1 cup vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (adjust to your spice preference)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the onion and bell pepper. Sauté until softened, about 5 to 7 minutes.
  3. Stir in the minced garlic, chili powder, cumin, and smoked paprika. Cook for 1 minute until fragrant.
  4. Add the diced sweet potato, black beans, diced tomatoes, tomato sauce, and vegetable broth to the pot.
  5. Stir in the cayenne pepper, salt, and black pepper.
  6. Bring the mixture to a boil, then reduce the heat to low.
  7. Cover and simmer for 25 to 30 minutes, or until the sweet potatoes are tender. Stir occasionally.
  8. Taste and adjust seasonings as needed before serving.

  • For extra smokiness, add another 1/4 teaspoon of smoked paprika.
