1 tablespoon olive oil
1 large onion, chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional)
1 (28 ounce) can diced tomatoes, undrained
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 large sweet potato, peeled and diced
4 cups vegetable broth
Salt and freshly ground black pepper to taste
Optional toppings: chopped fresh cilantro, avocado slices, vegan sour cream
Heat olive oil in a large pot or Dutch oven over medium heat.
Add the chopped onion and cook until softened, about 5-7 minutes.
Stir in the minced garlic, cumin, chili powder, smoked paprika, and cayenne pepper (if using). Cook for 1 minute more until fragrant.
Add the diced tomatoes, kidney beans, black beans, diced sweet potato, and vegetable broth to the pot.
Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes, or until the sweet potatoes are tender.
Season with salt and black pepper to taste.
Serve hot, garnished with your favorite toppings.
Notes
For a thicker chili, mash some of the sweet potato against the side of the pot.
Adjust the cayenne pepper to your preferred level of spice.
This chili freezes well for future meals.
