1 tablespoon olive oil
1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
2 medium sweet potatoes, peeled and diced into 1/2-inch pieces
1 (15 ounce) can black beans, rinsed and drained
1 (10 ounce) can diced tomatoes and green chilies, undrained
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup water or beef broth
1/2 cup shredded cheddar or Monterey Jack cheese (optional)
Instructions
Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
Add the chopped onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Stir in the diced sweet potatoes, black beans, diced tomatoes and green chilies, chili powder, cumin, oregano, salt, and pepper.
Pour in the water or broth. Bring the mixture to a simmer.
Reduce the heat to medium-low, cover the skillet, and cook for 12 to 15 minutes, or until the sweet potatoes are tender. Stir occasionally to prevent sticking.
Remove the lid. If using cheese, sprinkle it over the top. Cover briefly (about 1 minute) until the cheese melts.
Serve directly from the skillet.
Notes
For a ground turkey version, substitute ground turkey for the ground beef.
If you prefer a softer texture, dice the sweet potatoes slightly smaller.
Serve with avocado slices or a dollop of sour cream if desired.
