This Sweet Potato Tater Tot Casserole is a cozy, family-friendly dish. It features a flavorful sweet potato base topped with cheesy, crispy tater tots for a fun take on classic hotdish.

Ingredients

Scale
  • 1 pound ground beef or turkey
  • 1 medium onion, chopped
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1/2 cup milk
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups mashed sweet potatoes, cooked and slightly cooled
  • 1 cup shredded cheddar cheese
  • 1 bag (16 ounces) frozen tater tots

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
  2. In a skillet, cook the ground meat and onion over medium heat until the meat is browned. Drain off any excess fat.
  3. Stir in the cream of mushroom soup, milk, thyme, salt, and pepper into the skillet with the meat. Cook until heated through.
  4. Spread the cooked meat mixture evenly into the bottom of the prepared baking dish.
  5. Gently spoon the mashed sweet potatoes over the meat layer, spreading them out to cover the surface.
  6. Sprinkle the shredded cheddar cheese evenly over the sweet potato layer.
  7. Arrange the frozen tater tots in a single layer over the cheese.
  8. Bake for 30 minutes.
  9. Increase the oven temperature to 400 degrees F. Bake for an additional 10 to 15 minutes, or until the tater tots are golden brown and crispy.
  10. Let the casserole rest for 5 minutes before serving.

Notes

  • You can substitute cream of chicken soup for cream of mushroom soup if you prefer.
  • For extra flavor, mix 1/2 teaspoon of smoked paprika into the meat mixture.
  • Ensure your mashed sweet potatoes are not piping hot, or they may melt the cheese prematurely.
