2 medium sweet potatoes, peeled and grated
1/4 cup all-purpose flour
1 large egg, beaten
1/4 teaspoon garlic powder

Instructions
Preheat your oven to 400°F (200°C) or your air fryer to 390°F (195°C). Line a baking sheet with parchment paper if baking.
Place the grated sweet potatoes in a clean kitchen towel or cheesecloth. Squeeze out as much excess moisture as possible. This step is crucial for crispy tots.
In a medium bowl, combine the squeezed sweet potatoes, flour, beaten egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Form the mixture into small tot shapes.
For baking: Arrange the tots on the prepared baking sheet. Drizzle with olive oil. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
For air frying: Place the tots in the air fryer basket in a single layer. Lightly spray or toss with olive oil. Air fry for 12-15 minutes, shaking the basket halfway through, until golden brown and crispy.
