1 gallon sweet tea, chilled
1/4 cup kosher salt
1/4 cup packed brown sugar
1 whole chicken, cut into 8 pieces (about 3-4 pounds)
1 tablespoon black peppercorns
2 bay leaves
1 teaspoon dried thyme
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional)
Instructions
In a large container or brining bag, combine the chilled sweet tea, kosher salt, and brown sugar. Stir until the salt and sugar are dissolved.
Add the chicken pieces to the brine, ensuring they are fully submerged.
Add the peppercorns, bay leaves, thyme, garlic powder, onion powder, smoked paprika, and cayenne pepper (if using) to the brine.
Cover the container or seal the bag and refrigerate for 4 to 6 hours.
Remove the chicken from the brine and discard the brine.
Pat the chicken pieces thoroughly dry with paper towels. This step is crucial for achieving a good sear and crispy skin.
Preheat your grill to medium-high heat (around 400°F or 200°C).
Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
Let the chicken rest for 5-10 minutes before serving.
