2 pounds pork shoulder, thinly sliced
1/2 cup pineapple juice
1/4 cup white vinegar
3 tablespoons achiote paste
4 dried guajillo chilies, stemmed and seeded
2 dried ancho chilies, stemmed and seeded
4 cloves garlic
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon ground cloves
1/2 cup fresh pineapple, diced
Salt and black pepper to taste
Corn tortillas, for serving
1/2 white onion, finely chopped, for topping
1/2 cup fresh cilantro, chopped, for topping
Lime wedges, for serving
Instructions
Soak the dried chilies in hot water for 20 minutes until soft. Drain the water.
Combine the soaked chilies, pineapple juice, vinegar, achiote paste, garlic, cumin, oregano, and cloves in a blender. Blend until completely smooth.
Place the sliced pork in a large bowl or zip-top bag. Pour the marinade over the pork, ensuring all pieces are coated. Add salt and pepper. Marinate in the refrigerator for at least 4 hours, or preferably overnight.
If using a grill: Thread the marinated pork slices onto vertical skewers or thread them onto long skewers, alternating with slices of pineapple, to mimic a trompo. If using an oven: Arrange the pork slices in a single layer on a baking sheet lined with foil. Place pineapple chunks around the pork.
Grill the pork over medium-high heat, turning often, until cooked through and slightly charred, about 15-20 minutes. If using the oven, broil on high, turning once, until cooked and edges are browned, about 10-12 minutes per side.
Once cooked, remove the pork and let it rest for 5 minutes. Finely chop the pork and pineapple mixture.
Warm the corn tortillas on a dry skillet or griddle until soft and pliable.
Fill each tortilla with the chopped al pastor mixture. Top with chopped onion, cilantro, and serve immediately with lime wedges.
Notes
For best flavor, use fresh pineapple juice instead of canned.
If you do not have a vertical skewer setup, you can cook the marinated pork in a hot skillet until browned and slightly crispy.
You can substitute pork shoulder with boneless pork loin if desired.
