1 pound flank steak, thinly sliced against the grain
1 tablespoon sesame oil
1 cup broccoli florets
1 red bell pepper, sliced
1/2 cup sliced carrots
1/4 cup soy sauce (low sodium preferred)
1/4 cup mirin (sweet rice wine)
2 tablespoons brown sugar
1 tablespoon grated fresh ginger
2 cloves garlic, minced
1 teaspoon cornstarch
2 tablespoons water
Cooked rice, for serving
Sesame seeds, for garnish
Instructions
In a small bowl, whisk together soy sauce, mirin, brown sugar, ginger, and garlic. Set aside half of this mixture for the sauce base.
In the remaining half of the mixture, whisk in the cornstarch and water until smooth. This is your thickening slurry. Set aside.
Heat sesame oil in a large skillet or wok over medium-high heat. Add the sliced beef and cook quickly until browned, about 2-3 minutes. Remove beef from the skillet and set aside.
Add broccoli, bell pepper, and carrots to the skillet. Stir fry for 3-4 minutes until vegetables are tender-crisp.
Return the beef to the skillet. Pour in the reserved sauce base (the mixture without cornstarch). Bring to a simmer.
Pour in the cornstarch slurry while stirring constantly. Cook for 1 minute until the sauce thickens and becomes glossy, coating the beef and vegetables.
Serve immediately over hot rice. Garnish with sesame seeds.
Notes
Slicing the steak thinly against the grain keeps the beef tender.
Do not overcrowd the pan when searing the beef; cook in batches if necessary.
