  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • 1 pound broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • For the Teriyaki Sauce:
  • 1/2 cup soy sauce
  • 1/4 cup mirin (Japanese sweet rice wine)
  • 1/4 cup packed brown sugar
  • 1 tablespoon honey
  • 1 teaspoon cornstarch
  • 1 tablespoon water

Instructions

  1. In a medium bowl, toss the chicken pieces with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Let it sit for 10 minutes.
  2. In a small bowl, whisk together the teriyaki sauce ingredients: 1/2 cup soy sauce, mirin, brown sugar, and honey. In a separate tiny bowl, mix 1 teaspoon cornstarch with 1 tablespoon water to create a slurry. Add this slurry to the teriyaki sauce mixture and whisk until smooth.
  3. Heat the sesame oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. Add the broccoli florets, red bell pepper, yellow bell pepper, and snap peas to the same skillet. Stir-fry for 5-7 minutes, or until the vegetables are tender-crisp.
  5. Add the minced garlic and grated ginger to the skillet with the vegetables. Cook for 1 minute more until fragrant.
  6. Return the cooked chicken to the skillet with the vegetables.
  7. Pour the prepared teriyaki sauce over the chicken and vegetables. Stir well to coat everything.
  8. Bring the sauce to a simmer and cook for 2-3 minutes, or until the sauce has thickened and coats the ingredients.
  9. Serve immediately over cooked rice.
