Ingredients

Scale
  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 packet (1 ounce) taco seasoning
  • 1 can (10 ounces) diced tomatoes and green chilies, undrained
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup frozen corn
  • 1/2 cup water
  • 1 cup shredded cheddar or Monterey Jack cheese

Instructions

  1. Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess fat.
  2. Stir in the taco seasoning, diced tomatoes and green chilies, rinsed black beans, frozen corn, and water.
  3. Bring the mixture to a simmer. Reduce heat to low, cover, and cook for 10 minutes, stirring occasionally.
  4. Remove the lid. Sprinkle the shredded cheese evenly over the top of the mixture.
  5. Cover the skillet again until the cheese is fully melted, about 2-3 minutes. Serve hot directly from the skillet.

Notes

  • For extra flavor, add 1 teaspoon of ground cumin to the beef while browning.
  • If you like heat, use the hot variety of diced tomatoes and green chilies.
  • Serve this skillet over rice or with tortilla chips for dipping.
