Make this fresh, crunchy Thai Chicken Salad featuring shredded chicken and a homemade creamy peanut dressing. It is a flavorful, light meal perfect for lunch or meal prepping.

Ingredients

Scale
  • 2 cups cooked, shredded chicken breast
  • 4 cups shredded Napa cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped green onions
  • 1/4 cup roasted peanuts, roughly chopped
  • 2 tablespoons crispy fried wonton strips (optional, for crunch)
  • For the Peanut Dressing:
  • 1/2 cup creamy peanut butter
  • 1/4 cup warm water
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce (or tamari)
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/2 teaspoon sriracha or chili garlic sauce (adjust to taste)

Instructions

  1. Prepare the dressing: In a small bowl, whisk together the peanut butter, warm water, rice vinegar, soy sauce, honey, sesame oil, ginger, garlic, and sriracha until smooth. Add more warm water, one teaspoon at a time, if you need a thinner consistency. Set aside.
  2. Prepare the vegetables: In a large bowl, combine the shredded cabbage, carrots, red bell pepper, cilantro, mint, and green onions.
  3. Add the chicken: Add the shredded cooked chicken to the bowl with the vegetables.
  4. Dress the salad: Pour about half of the peanut dressing over the chicken and vegetable mixture. Toss gently until everything is lightly coated. Add more dressing as needed, reserving some for serving if desired.
  5. Finish and serve: Gently fold in the chopped peanuts and crispy wonton strips (if using). Serve immediately or chill for later.

Notes

  • For meal prepping, store the dressing separately from the salad components to maintain maximum crunch.
  • You can substitute rotisserie chicken for the cooked shredded chicken to save time.
  • For a tangier dressing, increase the rice vinegar by one tablespoon and reduce the honey slightly.
