  • 1 pound boneless, skinless chicken breasts
  • 8 ounces noodles (such as spaghetti or linguine)
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 1/2 cup chopped peanuts
  • 1/4 cup chopped fresh cilantro
  • For the Peanut Dressing:
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 2-4 tablespoons hot water, to thin

Instructions

  1. Grill or pan-fry chicken breasts until cooked through. Let cool slightly, then slice.
  2. Cook noodles according to package directions. Drain and rinse with cold water.
  3. In a large bowl, whisk together all peanut dressing ingredients until smooth. Add hot water, one tablespoon at a time, until desired consistency is reached.
  4. Add the cooked noodles, sliced chicken, bell peppers, and carrots to the bowl with the dressing.
  5. Toss gently until everything is well coated.
  6. Garnish with chopped peanuts and cilantro before serving.
