Ingredients

Scale
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 8 ounces dried linguine or spaghetti
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup smooth peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon sriracha or other hot sauce, or to taste
  • 1/4 cup unsweetened coconut milk or water
  • 1/4 cup chopped roasted peanuts, for garnish
  • 2 green onions, thinly sliced, for garnish

Instructions

  1. Cook the linguine according to package directions. Drain and set aside.
  2. While the pasta cooks, heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  4. Add the minced garlic and grated ginger to the skillet and cook for 1 minute until fragrant.
  5. In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sriracha, and coconut milk until smooth.
  6. Pour the peanut sauce over the chicken in the skillet. Stir to coat the chicken evenly.
  7. Add the cooked linguine to the skillet with the chicken and sauce. Toss gently to combine and heat through.
  8. Serve immediately, garnished with chopped peanuts and sliced green onions.

Notes

  • Adjust the sriracha to your preferred level of spice.
  • For a vegetarian option, substitute firm tofu or your favorite vegetables for chicken.
  • If the sauce seems too thick, add a tablespoon or two of water or coconut milk until it reaches your desired consistency.
