1 pound boneless, skinless chicken breast, cooked and shredded
1 cup shredded red cabbage
1 cup shredded green cabbage
1 cup shredded carrots
1/2 cup chopped roasted peanuts
1/4 cup chopped fresh cilantro
1/4 cup chopped green onions
For the Peanut Dressing:
1/2 cup creamy peanut butter
1/4 cup rice vinegar
2 tablespoons soy sauce
1 tablespoon honey or maple syrup
1 tablespoon sesame oil
1 teaspoon grated fresh ginger
1 clove garlic, minced
2-4 tablespoons water, to thin
Instructions
In a large bowl, combine the shredded chicken, red cabbage, green cabbage, carrots, chopped peanuts, cilantro, and green onions.
In a separate medium bowl, whisk together the peanut butter, rice vinegar, soy sauce, honey or maple syrup, sesame oil, grated ginger, and minced garlic until smooth.
Gradually whisk in water, 1 tablespoon at a time, until the dressing reaches your desired consistency.
Pour the peanut dressing over the chicken and vegetable mixture.
Toss everything together until well combined.
Divide the salad into meal prep containers for easy lunches throughout the week.
Notes
You can use leftover cooked chicken or rotisserie chicken for convenience.
Adjust the spice level by adding a pinch of red pepper flakes to the dressing.
Other vegetables like bell peppers or edamame can be added.
Store dressed salad in airtight containers in the refrigerator for up to 4 days.
