Instructions

  1. Prepare the crust: Mix flour and salt. Cut in the cold butter until mixture resembles coarse crumbs. Gradually add ice water, mixing until dough just comes together. Divide in half, shape into disks, wrap, and chill for at least one hour.
  2. Prepare the filling: In a large bowl, combine sliced apples, both sugars, cinnamon, nutmeg, lemon juice, and cornstarch. Toss gently until apples are evenly coated.
  3. Preheat your oven to 425°F (220°C).
  4. Roll out one dough disk and carefully place it into a 9-inch pie plate. Trim the edges.
  5. Pour the apple filling into the crust. Dot the top of the apples with a few small pieces of leftover butter, if desired.
