  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar

  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas thoroughly.
  3. Stir in the melted butter and sugar into the mashed bananas. Mix until just combined.
  4. Beat in the egg and vanilla extract.
  5. In a separate medium bowl, whisk together the baking soda and salt.
  6. Add the dry ingredients to the wet ingredients. Mix gently until just combined. Do not overmix the batter.
  7. Fold in the chopped nuts, if using.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.

  • For an extra moist loaf, you can substitute 1/4 cup of the sugar with brown sugar.
