  • 1/4 cup diced red bell pepper
  • 2 tablespoons chopped onion
  • 1 teaspoon chili powder

  • Salt and pepper to taste
  • Cooking spray or 1 teaspoon oil

Instructions

  1. Whisk eggs, milk, chili powder, cumin, salt, and pepper in a bowl.
  2. Heat cooking spray or oil in a large skillet over medium heat. Sauté onion and bell pepper until soft, about 3 minutes.
