Ingredients
Scale
1 cup (2 sticks) unsalted butter, melted
1 1/4 cups granulated sugar
3/4 cup packed light brown sugar
2 large eggs, room temperature
1 tablespoon vanilla extract
3/4 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
4 ounces bittersweet chocolate, chopped
Instructions
Preheat your oven to 350 degrees F. Line baking sheets with parchment paper.
In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
Beat in the eggs one at a time, then mix in the vanilla extract.
In a separate bowl, sift together the cocoa powder, flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Stir in the chopped bittersweet chocolate.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10 to 12 minutes. The edges should look set, but the centers will still look slightly underbaked.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Room temperature eggs incorporate better into the batter.
Do not overbake; these must be fudgy in the center.
For extra crackle, chill the dough for 30 minutes before baking.
