  • 1 cup (2 sticks) unsalted butter, browned and cooled slightly
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup flaky sea salt, divided (for dough and topping)

Instructions

  1. Melt the butter in a saucepan over medium heat until it foams and brown bits form at the bottom. Remove from heat and let cool for 10 minutes.
  2. In a large bowl, whisk the cooled brown butter with the brown sugar and granulated sugar until combined.
  3. Beat in the eggs one at a time, then mix in the honey and vanilla extract until smooth.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Stir in 2 tablespoons of the flaky sea salt into the dough.
  7. Cover the dough and chill for at least 2 hours, or up to 24 hours, for best texture.
  8. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line baking sheets with parchment paper.
  9. Scoop rounded tablespoons of dough onto the prepared sheets, leaving 2 inches between cookies.
  10. Bake for 10 to 12 minutes, or until the edges are set but the centers still look slightly underdone.
  11. Immediately upon removing from the oven, sprinkle the tops of the hot cookies with the remaining flaky sea salt.
  12. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
