Ingredients

  • 1 whole chicken (about 3-4 lbs)
  • 8 cups water
  • 2 large carrots, roughly chopped
  • 2 celery stalks, roughly chopped
  • 1 large yellow onion, quartered
  • 4 sprigs fresh parsley
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon salt (for broth)
  • 8 oz egg noodles
  • 1 cup shredded cooked chicken (from broth chicken)
  • Salt and pepper to taste

Instructions

  1. Place the whole chicken, water, carrots, celery, onion, parsley, thyme, bay leaf, peppercorns, and 1 teaspoon of salt into a large stockpot.
  2. Bring the mixture to a boil over high heat, then immediately reduce heat to low.
  3. Simmer gently, partially covered, for 1.5 to 2 hours, or until the chicken is very tender and easily pulls apart. Skim off any foam or impurities that rise to the surface during the first 30 minutes.
  4. Remove the chicken from the pot and set it aside to cool.
  5. Strain the broth through a fine-mesh sieve into a clean pot, discarding the solids (vegetables and herbs). You should have about 6-7 cups of clear broth.
  6. Once the chicken is cool enough to handle, shred the meat, discarding skin and bones.
  7. Bring the strained broth back to a simmer. Add the egg noodles and cook according to package directions until tender.
  8. Return the shredded chicken to the pot with the broth and noodles.
  9. Taste the soup and adjust seasoning with salt and pepper as needed.
  10. Serve hot.

Notes

  • For an extra clear broth, chill the strained broth overnight; fat will solidify on top and you can easily lift it off before reheating.
  • If you prefer a richer flavor, use chicken pieces with bones instead of a whole chicken.
  • Do not boil the broth vigorously after the initial boil; gentle simmering creates clear, clean-tasting soup.
