This creamy, cheesy corn dip provides a fantastic alternative to traditional queso, perfect for shaking up your next party appetizer spread. It delivers big corn flavor in a satisfyingly dippable form.

  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup mayonnaise
  • 1 small jalapeño, seeded and minced
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt, to taste
  • Tortilla chips, for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
  2. In a medium bowl, combine the drained corn, softened cream cheese, sour cream, Monterey Jack cheese, cheddar cheese, and mayonnaise. Mix well until fully incorporated.
  3. Stir in the minced jalapeño, garlic powder, and onion powder. Add salt to your preference.
  4. Spread the mixture evenly into the prepared baking dish.
  5. Bake for 20 to 25 minutes, or until the dip is hot throughout and the cheese is melted and bubbly on top.
  6. Let the dip rest for 5 minutes before serving hot with tortilla chips.

Notes

  • For extra heat, leave some seeds in the jalapeño.
  • You can substitute any of your favorite melting cheeses for the jack and cheddar blend.
  • This dip tastes great when slightly charred on the edges.
