  • 1/4 cup reserved noodle water

Instructions

  1. Cook noodles according to package directions. Before draining, reserve about 1/2 cup of the starchy cooking water. Drain the rest.
  2. While noodles cook, melt the butter in a large skillet over medium heat.
  3. Add the minced garlic to the melted butter. Cook for about 1 minute until fragrant. Watch closely to prevent burning.
  4. Whisk in the soy sauce, oyster sauce, and brown sugar until the sugar dissolves. Let the sauce simmer for about 30 seconds.
  5. Add the sesame oil to the sauce mixture.
  6. Add the drained noodles and about 1/4 cup of the reserved noodle water to the skillet. Toss everything well to coat the noodles evenly with the sauce. Add more noodle water if the sauce seems too thick.
  7. Toss for 1-2 minutes until the sauce coats the noodles beautifully.
  8. Serve immediately, garnished with green onions if you like.

Notes

  • Use fresh garlic; dried garlic powder changes the flavor profile completely.
  • If you don’t have oyster sauce, substitute with an extra teaspoon of soy sauce and a pinch of sugar.
  • For extra heat, add a pinch of red pepper flakes with the garlic.
