2 cups cooked quinoa
1 small head of broccoli, chopped finely
1 cup toasted pecans, roughly chopped
1/2 cup dried cranberries
1/4 cup crumbled blue cheese (optional)
1/4 cup thinly sliced red onion
For the Dressing:
1/4 cup olive oil
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 teaspoon maple syrup

Instructions
Cook quinoa according to package directions; let cool completely.
In a large bowl, combine the cooled quinoa, chopped broccoli, toasted pecans, dried cranberries, blue cheese (if using), and red onion.
In a small jar, combine all dressing ingredients: olive oil, apple cider vinegar, Dijon mustard, maple syrup, salt, and pepper.
