These blueberry muffins are incredibly moist, bursting with blueberries, and topped with a sweet crumb. They are designed to be exceptionally delicious, living up to the ‘to die for’ reputation.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 2 cups fresh blueberries
  • For the crumb topping:
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
  6. Gently fold in the blueberries.
  7. Prepare the crumb topping by combining the flour and sugar in a small bowl. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  8. Divide the muffin batter evenly among the prepared muffin cups, filling each about two-thirds full.
  9. Sprinkle the crumb topping generously over the batter in each muffin cup.
  10. Bake for 20-25 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
  11. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For an extra burst of blueberry flavor, you can toss the blueberries with a tablespoon of flour before adding them to the batter. This helps prevent them from sinking to the bottom.
  • Ensure your butter for the crumb topping is very cold for the best texture.
  • These muffins are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 3 days.
