1/2 cup chopped nuts (almonds, walnuts, or pecans)
1/4 cup dried fruit (raisins, cranberries, or chopped apricots)
1/4 cup granola
1/4 cup peanut butter or almond butter
1/4 cup honey or maple syrup
2 tablespoons melted coconut oil or unsalted butter
1 teaspoon vanilla extract

Instructions
Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
In a large bowl, combine the rolled oats, chopped nuts, dried fruit, and granola.
In a separate small bowl, whisk together the peanut butter, honey, melted coconut oil, vanilla extract, and salt until smooth.
Pour the wet ingredients over the dry ingredients and mix well until everything is evenly coated.
Transfer the mixture to the prepared baking pan. Press it down firmly and evenly using a spatula or the bottom of a glass.
Bake for 20-25 minutes, or until the edges are golden brown and the center is set.
Let the bars cool completely in the pan on a wire rack. This is crucial for them to hold their shape.
Once cooled, use the parchment paper overhang to lift the slab out of the pan. Cut into bars using a sharp knife.
