2 lbs Russet potatoes, peeled and quartered
1/2 cup Heavy cream
4 tbsp Unsalted butter
2 tbsp Truffle oil (high quality)
1/4 cup Parmesan cheese, grated
Salt, to taste
Black pepper, to taste
Instructions
Place the potatoes in a large pot and cover with cold, salted water.
Bring the water to a boil and cook until the potatoes are fork-tender, about 15-20 minutes.
Drain the potatoes well and return them to the hot, empty pot over low heat for one minute to dry out any excess moisture.
Heat the heavy cream and butter in a small saucepan until the butter is melted. Do not boil.
Remove the potatoes from the heat. Mash the potatoes until mostly smooth.
Gradually add the warm cream and butter mixture to the potatoes, mixing until just combined. Avoid overmixing.
Stir in the grated Parmesan cheese and the truffle oil.
Season generously with salt and black pepper to your taste.
Serve immediately for the best flavor and texture.
