  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste
  • 12 ounces pasta, cooked according to package directions

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
  3. Add onion to the skillet and cook until softened, about 5 minutes.
  4. Add minced garlic, chopped sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  5. Pour in heavy cream and bring to a simmer, stirring occasionally.
  6. Reduce heat to low. Stir in Parmesan cheese until melted and the sauce is smooth.
  7. Return the cooked chicken to the skillet. Stir in fresh parsley.
