1 cup (2 sticks) unsalted butter
4 ounces unsweetened chocolate, chopped
4 ounces bittersweet chocolate, chopped
1 1/2 cups granulated sugar
2 teaspoons instant espresso powder
1 teaspoon vanilla extract
6 large eggs
1 cup all-purpose flour
1/2 teaspoon salt
1/2 cup chopped walnuts or pecans (optional)
1/2 cup milk chocolate chips (optional)
1/4 cup mayonnaise (the surprise ingredient!)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan, or line it with parchment paper.
In a large microwave-safe bowl, melt the butter and unsweetened chocolate together. Stir until smooth.
Add the bittersweet chocolate, granulated sugar, and instant espresso powder to the melted butter and chocolate mixture. Stir until the sugar is dissolved and the mixture is smooth.
Stir in the vanilla extract.
Add the eggs one at a time, beating well after each addition until the mixture is thick and glossy.
In a separate small bowl, whisk together the flour and salt.
Add the flour mixture to the wet ingredients and mix until just combined. Do not overmix.
Gently fold in the mayonnaise until no streaks remain. This adds an incredible richness and fudgy texture.
If using, fold in the nuts and milk chocolate chips.
Pour the batter into the prepared baking pan and spread evenly.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached (not wet batter).
Let the brownies cool completely in the pan before cutting into squares.
