  • 4 ounces bittersweet chocolate, finely chopped
  • 2 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

  • For the Raspberry Sauce:
  • 1 cup fresh or frozen raspberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. Make the raspberry sauce: Combine raspberries, 2 tablespoons sugar, and lemon juice in a small saucepan. Cook over medium heat, stirring occasionally, until raspberries break down and sauce thickens, about 5-7 minutes. Strain if desired for a smoother sauce. Let cool.
  2. Melt the chocolate: Place chopped chocolate in a heatproof bowl. Heat 1/4 cup of the heavy cream in a small saucepan until simmering. Pour hot cream over chocolate and let stand for 1 minute, then whisk until smooth. Stir in vanilla extract. Let cool slightly.
  3. Whip egg whites: In a clean, dry bowl, beat egg whites with a pinch of salt until soft peaks form. Gradually add the 1/4 cup granulated sugar and continue beating until stiff, glossy peaks form.
  4. Whip remaining cream: In another bowl, whip the remaining 3/4 cup heavy cream until medium peaks form.
  5. Combine: Gently fold about one-third of the whipped egg whites into the slightly cooled chocolate mixture to lighten it. Then, gently fold in the remaining egg whites, followed by the whipped cream, until just combined. Be careful not to overmix.
  6. Chill: Spoon the mousse into individual serving glasses or ramekins. Cover and refrigerate for at least 2 hours, or until set.
  7. Serve: Top each mousse with a spoonful of the cooled raspberry sauce before serving.
