Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a saucepan, gently heat the heavy cream and half of the granulated sugar until the sugar dissolves. Do not boil.
  3. In a separate bowl, whisk the egg yolks with the vanilla extract and salt.
  4. Slowly temper the egg yolks by whisking in a small amount of the warm cream mixture.
  5. Gradually whisk the tempered egg yolk mixture back into the remaining cream in the saucepan.
  6. Pour the custard mixture into individual ramekins.
  7. Place the ramekins in a baking dish and fill the dish with hot water, creating a water bath.

  9. Remove the ramekins from the water bath and let them cool completely.
  10. Chill the custards in the refrigerator for at least 2 hours.
  11. Before serving, sprinkle the remaining granulated sugar evenly over the top of each custard.
  12. Use a kitchen torch to caramelize the sugar until it forms a hard, glassy crust. Let it sit for a minute before serving.
