Make simple, naturally sweet pancakes using oats and bananas. This recipe is entirely vegan and requires no refined sugar or eggs.

  • 1 cup rolled oats
  • 1/2 cup plant milk (almond or soy)
  • 1 large ripe banana, mashed
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon maple syrup (optional)
  • 1 teaspoon vanilla extract
  • 1 tablespoon oil, plus more for the griddle

Instructions

  1. Place the rolled oats in a blender or food processor. Process until you create a fine oat flour.
  2. Transfer the oat flour to a medium bowl. Add the baking powder and cinnamon. Whisk the dry ingredients together.
  3. In a separate bowl, mash the ripe banana until smooth. Stir in the plant milk, maple syrup (if using), and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine. Let the batter rest for 5 minutes.
  5. Heat a lightly oiled griddle or non-stick pan over medium heat.
  6. Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook for 3 to 4 minutes per side, until bubbles form on the surface and the edges look set.
  7. Flip and cook the second side until golden brown. Serve immediately.

Notes

  • For fluffier pancakes, you can substitute 1/2 cup of the rolled oats with all-purpose flour, if you are not aiming for a strictly gluten-free recipe.
  • Use very ripe bananas for the best natural sweetness.
  • If the batter seems too thick after resting, add plant milk one tablespoon at a time until you reach your desired consistency.
