Make a simple, creamy, dairy-free chocolate chia seed pudding that works well for breakfast or dessert.

  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk (or other plant milk)
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons maple syrup (adjust to taste)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a medium bowl or jar, combine the chia seeds, cocoa powder, maple syrup, vanilla extract, and salt.
  2. Pour in the almond milk.
  3. Whisk or stir vigorously for about one minute to fully incorporate the cocoa powder and prevent the chia seeds from clumping at the bottom.
  4. Let the mixture sit for 5 minutes, then stir again thoroughly. This second stir helps achieve a smooth texture.
  5. Cover the bowl or jar and refrigerate for at least 4 hours, or preferably overnight, until the pudding thickens to your desired consistency.
  6. Stir before serving. Add more plant milk if the pudding is too thick, or let it sit longer if it is too thin.

Notes

  • For a richer flavor, use full-fat coconut milk instead of almond milk.
  • Sweetness can be adjusted by using agave nectar or date syrup instead of maple syrup.
  • For a thicker pudding, use slightly less liquid (3/4 cup milk). For a thinner pudding, use 1 1/4 cups milk.
  • Top with fresh berries, sliced banana, or chopped nuts before eating.
