Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a small bowl, whisk together the ground flaxseed and water. Let it sit for 5-10 minutes until it forms a gel-like consistency. This is your flax egg.
  3. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
  4. In a separate medium bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, non-dairy milk, vanilla extract, and the flax egg. Stir until well combined.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
