1 cup granulated sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves

1 cup unsweetened pumpkin puree
1/2 cup unsweetened plant-based milk (like almond or soy)
1/4 cup vegetable oil
1 teaspoon vanilla extract
1 tablespoon apple cider vinegar
For the Glaze:
1 cup powdered sugar
2-3 tablespoons unsweetened plant-based milk
1/2 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a donut pan or line it with paper liners.
In a large bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
In a separate medium bowl, whisk together the pumpkin puree, plant-based milk, vegetable oil, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Stir in the apple cider vinegar. The batter will become slightly frothy.
Spoon or pipe the batter into the prepared donut pan, filling each cavity about two-thirds full.
Bake for 15-18 minutes, or until a toothpick inserted into the center of a donut comes out clean.
Let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
While the donuts are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, plant-based milk, and vanilla extract until smooth. Add more milk if needed to reach your desired consistency.
Once the donuts are completely cool, dip the tops into the glaze or drizzle it over them. Let the glaze set before serving.
Notes
Ensure your pumpkin puree is not pumpkin pie filling.
You can add a pinch of allspice to the spice mix for extra flavor.
For a richer glaze, you can add a tablespoon of melted vegan butter.
