  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups sliced yellow squash (about 1.5 lbs)
  • 1 cup vegetable broth
  • 1/2 cup vegan cream cheese
  • 1/4 cup nutritional yeast
  • 1 tablespoon cornstarch
  • 1 teaspoon dried dill
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/2 cup vegan shredded cheese (cheddar or mozzarella style)
  • 1/4 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Add the sliced squash to the skillet. Cook, stirring occasionally, until the squash is slightly tender, about 5-8 minutes.
  5. In a small bowl, whisk together the vegetable broth, vegan cream cheese, nutritional yeast, cornstarch, dill, salt, and pepper until smooth.
  6. Pour the sauce over the squash mixture in the skillet. Stir well to combine and cook for 2-3 minutes, until the sauce thickens slightly.
  7. Transfer the squash mixture to the prepared baking dish.
  8. Sprinkle the vegan shredded cheese evenly over the top. If using, sprinkle breadcrumbs over the cheese.
  9. Bake for 20-25 minutes, or until bubbly and lightly browned.
  10. Let stand for 5 minutes before serving.

  • You can use zucchini instead of or in addition to yellow squash.
