Make flavorful vegetable fried rice at home using a simple, balanced sesame ginger sauce.

Ingredients

  • 3 cups cooked, cold day-old white rice
  • 1 tablespoon vegetable oil
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 2 large eggs, lightly beaten
  • 2 tablespoons soy sauce (or tamari)
  • 1 teaspoon toasted sesame oil
  • 1/4 cup Sesame Ginger Sauce (recipe below)
  • 2 green onions, sliced, for garnish
  • For the Sesame Ginger Sauce:
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)

Instructions

  1. Prepare the Sesame Ginger Sauce: In a small bowl, whisk together soy sauce, rice vinegar, honey, grated ginger, and sesame oil. Set aside.
  2. Cook the Eggs: Heat 1 teaspoon of vegetable oil in a large skillet or wok over medium-high heat. Pour in the beaten eggs and scramble until just set. Remove the eggs from the wok and set aside.
  3. Stir-fry Vegetables: Add the remaining vegetable oil to the wok. Add the onion and cook for 1 minute until softened. Add the mixed vegetables and minced garlic. Stir-fry for 3 to 4 minutes until the vegetables are tender-crisp.
  4. Add Rice: Push the vegetables to one side of the wok. Add the cold rice to the empty side. Break up the rice clumps with your spatula. Stir-fry the rice for 3 minutes until it heats through and begins to lightly toast.
  5. Combine and Sauce: Return the cooked eggs to the wok. Pour the prepared Sesame Ginger Sauce over the rice mixture. Stir quickly to coat everything evenly.
  6. Thicken Sauce: If you did not use the cornstarch slurry in the main sauce preparation, quickly mix the slurry now and pour it into the wok while stirring constantly until the sauce thickens slightly, about 30 seconds.
  7. Finish: Stir in the 1 teaspoon of toasted sesame oil and 2 tablespoons of soy sauce. Taste and adjust seasoning if needed.
  8. Serve immediately, garnished with sliced green onions.

Notes

  • Use cold, day-old rice for the best texture; fresh rice will become mushy.
  • Cook the rice mixture over high heat to achieve a slightly charred, restaurant-style flavor.
  • For added protein, include cubed tofu or cooked chicken breast with the vegetables.
  • Substitute broccoli florets or sliced bell peppers for some of the mixed vegetables.
