  • 1 sheet nori (seaweed)
  • 1 cup cooked sushi rice, seasoned
  • 1/2 avocado, sliced
  • 1/4 cup shredded carrots
  • 1/4 cup cucumber, julienned
  • 1/4 cup red bell pepper, julienned
  • 2 tablespoons pickled ginger
  • 2 tablespoons soy sauce (for dipping)
  • 1 tablespoon sriracha mayo (optional)

Instructions

  1. Lay the nori sheet shiny-side down on a bamboo sushi mat or plastic wrap.
  2. Spread the seasoned sushi rice evenly over the nori, leaving about a 1-inch border at the top.
  3. Arrange the avocado, carrots, cucumber, and red bell pepper in a line across the rice, about one-third of the way up from the bottom.
  4. Add the pickled ginger on top of the vegetables.
  5. If using, drizzle with sriracha mayo.
  6. Tightly roll the nori and rice using the sushi mat, tucking in the filling as you go.
  7. Moisten the top border of the nori with a little water to seal the roll.
  8. Cut the sushi burrito in half, if desired.
  9. Serve immediately with soy sauce for dipping.
