  • 2 pounds beef bones (marrow bones and knuckle bones)
  • 1 pound beef brisket or chuck roast
  • 1 large yellow onion, halved
  • 4-inch piece of ginger, halved lengthwise
  • 1/4 cup fish sauce
  • 1 tablespoon salt
  • 1 teaspoon granulated sugar
  • 1 teaspoon black peppercorns
  • 8 whole star anise
  • 4 whole cloves
  • 2 cinnamon sticks
  • 1 teaspoon coriander seeds
  • 1 pound dried flat rice noodles
  • Fresh herbs for garnish (cilantro, Thai basil, mint)
  • Bean sprouts
  • Lime wedges
  • Sliced jalapeños

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roast the beef bones and brisket on a baking sheet for 30-40 minutes, until browned.
  3. Char the halved onion and ginger directly over a gas flame or under the broiler until blackened in spots.
  4. Place the roasted bones, brisket, charred onion, charred ginger, fish sauce, salt, sugar, peppercorns, star anise, cloves, cinnamon sticks, and coriander seeds in a large stockpot.
  5. Add 12 cups of water to the pot.
  6. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for at least 3 hours, or up to 6 hours for a richer flavor. Skim off any impurities that rise to the surface.
  7. Remove the brisket from the pot and let it cool. Slice it thinly against the grain.
  8. Strain the broth through a fine-mesh sieve into a clean pot. Discard the solids. Adjust seasoning if needed.
  9. Cook the rice noodles according to package directions. Drain and rinse with cold water.
  10. To serve, place a portion of cooked noodles in each bowl. Arrange slices of brisket over the noodles.
  11. Ladle the hot broth over the noodles and beef.
  12. Garnish with fresh herbs, bean sprouts, lime wedges, and sliced jalapeños.

Notes

  • For a clearer broth, you can strain it twice.
  • You can use different cuts of beef like flank steak or short ribs.
  • Adjust the spices to your preference.
