  • 8 sheets rice paper wrappers
  • 8 medium shrimp, peeled and deveined, cooked
  • 1 cup shredded lettuce
  • 1 cup shredded carrots
  • 1/2 cup thinly sliced cucumber
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup thinly sliced red bell pepper
  • Optional: Rice vermicelli noodles
  • For Dipping Sauce:
  • 1/4 cup hoisin sauce
  • 2 tablespoons peanut butter
  • 1 tablespoon lime juice
  • 1 tablespoon soy sauce
  • 1 teaspoon sriracha (optional)
  • 1 teaspoon honey or maple syrup

Instructions

  1. Prepare your ingredients: Cook shrimp if not already cooked, shred lettuce and carrots, slice cucumber, red bell pepper, and have mint and cilantro leaves ready. If using, cook rice vermicelli noodles according to package directions and drain.
  2. Soak a rice paper wrapper in warm water for about 15-30 seconds, or until pliable.
  3. Lay the softened wrapper flat on a clean, damp surface.
  4. Arrange your fillings on the lower third of the wrapper: start with a layer of lettuce, then carrots, cucumber, red bell pepper, mint, cilantro, and shrimp (and vermicelli noodles if using). Do not overfill.
  5. Fold the bottom edge of the wrapper up over the fillings.
  6. Fold in the sides of the wrapper towards the center.
  7. Tightly roll the spring roll upwards to enclose the fillings.
  8. Repeat with the remaining wrappers and fillings.
  9. To make the dipping sauce, whisk together hoisin sauce, peanut butter, lime juice, soy sauce, sriracha (if using), and honey or maple syrup in a small bowl until smooth. Add a tablespoon of warm water if the sauce is too thick.
  10. Serve the spring rolls immediately with the dipping sauce.

Notes

  • Ensure your fillings are cut thinly so the rolls are easy to wrap.
  • Don’t soak the rice paper for too long, or it will become too sticky and difficult to handle.
  • If the spring rolls are sticking, lightly dampen your work surface.
  • You can customize the fillings with other vegetables like avocado, bean sprouts, or cooked chicken.
