Ingredients
Pasta (your favorite shape): 1 pound
Cherry tomatoes: 1 pint
Garlic cloves: 4, minced
Olive oil: 1/4 cup
Red pepper flakes: 1/2 teaspoon
Heavy cream: 1/2 cup
Parmesan cheese, grated: 1/2 cup, plus more for serving
Fresh basil leaves: 1/4 cup, chopped
Salt: to taste
Black pepper: to taste
Instructions
Cook pasta according to package directions until al dente. Reserve about 1 cup of the pasta water, then drain the pasta.
While the pasta cooks, heat the olive oil in a large skillet over medium heat.
Add the cherry tomatoes and cook, stirring occasionally, until they begin to burst, about 8-10 minutes.
Add the minced garlic and red pepper flakes. Cook for 1 minute until fragrant.
Reduce the heat to low. Stir in the heavy cream and let it warm through for 2 minutes.
Add the grated Parmesan cheese, stirring until the sauce is smooth.
Add the drained pasta to the skillet. Toss well to coat.
If the sauce seems too thick, add the reserved pasta water, a splash at a time, until you reach your desired consistency.
Stir in the fresh basil. Season with salt and pepper to your taste.
Serve immediately with extra Parmesan cheese.
