2 pounds butternut or acorn squash, peeled, seeded, and cubed
2 tablespoons olive oil
1 cup chopped yellow onion
2 cloves garlic, minced
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup breadcrumbs
1 tablespoon melted butter
Instructions
Preheat your oven to 375°F (190°C).
Toss the cubed squash with 1 tablespoon of olive oil, salt, and pepper. Spread in a single layer on a baking sheet.
Roast the squash for 20-25 minutes, or until tender.
While the squash is roasting, heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic and cook for 1 minute more until fragrant.
Stir in the heavy cream and Parmesan cheese. Cook, stirring, until the cheese is melted and the sauce is slightly thickened.
In a medium bowl, combine the roasted squash, onion mixture, salt, and pepper. Mix well.
Transfer the mixture to a greased 8×8 inch baking dish.
In a small bowl, combine the breadcrumbs and melted butter. Sprinkle evenly over the squash mixture.
Bake for 20-25 minutes, or until the top is golden brown and bubbly.
Notes
You can use a mix of butternut and acorn squash for added flavor and texture.
For a vegetarian option, ensure your Parmesan cheese is vegetarian.
Feel free to add other seasonings like nutmeg or sage to the squash mixture.
