A delicious and light Zoodle Tofu Pad Thai that swaps traditional noodles for zucchini noodles. It’s packed with flavor from a tangy sauce, crisp vegetables, and savory tofu, all topped with crunchy peanuts.

Ingredients

  • 8 ounces firm or extra-firm tofu, pressed and cubed
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon sriracha or chili garlic sauce (adjust to taste)
  • 1 teaspoon brown sugar or maple syrup
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 medium zucchini, spiralized
  • 1 tablespoon vegetable oil
  • 1 cup broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1/2 cup bean sprouts
  • 1/4 cup chopped peanuts, for garnish
  • Fresh cilantro, for garnish

Instructions

  1. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, sriracha, and brown sugar. Set aside.
  2. In a separate bowl, toss the tofu cubes with 1 tablespoon of the sauce mixture.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and cook until golden brown and slightly crispy on all sides. Remove tofu from the skillet and set aside.
  4. Add broccoli florets and red bell pepper to the same skillet. Stir-fry for 3-4 minutes until tender-crisp.
  5. Add the minced garlic and grated ginger to the skillet and cook for 30 seconds until fragrant.
  6. Add the spiralized zucchini noodles to the skillet. Cook for 2-3 minutes, stirring frequently, until the zoodles are slightly softened but still have a bite.
  7. Pour the remaining sauce mixture over the zoodles and vegetables. Toss well to coat.
  8. Return the cooked tofu to the skillet. Add the bean sprouts and toss everything together for another minute until heated through.
  9. Serve immediately, garnished with chopped peanuts and fresh cilantro.

Notes

  • For a spicier dish, add more sriracha or chili garlic sauce.
  • Feel free to add other vegetables like carrots, snap peas, or mushrooms.
  • Ensure your tofu is well-pressed to get the best texture.
