2 pounds zucchini, thinly sliced
1 teaspoon salt, divided
1/2 teaspoon black pepper
1 cup shredded cheddar cheese
1/2 cup breadcrumbs
1/4 cup melted butter
1/4 cup chopped fresh parsley
Instructions
Preheat your oven to 375°F (190°C).
Layer half of the zucchini slices in a greased 9×13 inch baking dish.
Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
Top with half of the shredded cheddar cheese.
Repeat layers with the remaining zucchini, salt, and pepper.
In a small bowl, combine breadcrumbs, melted butter, and parsley.
Sprinkle the breadcrumb mixture evenly over the top of the casserole.
Bake for 30-40 minutes, or until the zucchini is tender and the topping is golden brown.
Let stand for 5 minutes before serving.
Notes
For best results, use fresh summer squash.
Adjust seasoning to your preference.
You can add other cheeses like Monterey Jack or Gruyere.
