Easy Chocolate Chip Ice Cream Sandwiches Using Toll House Cookies

Make simple chocolate chip ice cream sandwiches using freshly baked Nestle Toll House cookies.

  • 1 package (16.5 ounces) Nestle Toll House refrigerated cookie dough
  • 1.5 quarts vanilla ice cream, slightly softened

Instructions

  1. Preheat your oven to the temperature specified on the Nestle Toll House cookie dough package. Line baking sheets with parchment paper.
  2. Drop rounded tablespoons of dough onto the prepared sheets, spacing them about 2 inches apart.
  3. Bake according to package directions until the edges are golden brown. You want the cookies slightly flatter than usual for better sandwiching.
  4. Remove cookies from the oven and let them cool on the baking sheet for 5 minutes. Transfer them to a wire rack to cool completely.
  5. Once cookies are completely cool, select two cookies of similar size for each sandwich.
  6. Place about 1/3 cup of slightly softened ice cream onto the flat side of one cookie.
  7. Top with the flat side of the second cookie and gently press down to spread the ice cream evenly to the edges.
  8. If desired, roll the exposed ice cream edges in mini chocolate chips or sprinkles.
  9. Place the assembled sandwiches on a parchment-lined tray and freeze for at least 2 hours, or until firm, before serving.

Notes

  • For easier handling, work quickly when assembling the sandwiches to prevent the ice cream from melting.
  • If you prefer smaller sandwiches, use slightly less ice cream per sandwich.
  • You can substitute vanilla ice cream with your favorite flavor.
  • Wrap individual sandwiches tightly in plastic wrap before freezing for long-term storage.
