Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour one 9×5 inch loaf pan.
  2. In a small bowl, pour the boiling water over the chopped dates and baking soda. Stir well and set aside to soak for 10 minutes. This step helps create a moist crumb.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. In a separate medium bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
  7. Stir in the soaked date mixture and the chopped walnuts until they are evenly distributed throughout the batter.
  8. Pour the batter into the prepared loaf pan. Sprinkle the top with extra chopped walnuts if desired.
  9. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
