A beloved Tex-Mex classic, this King Ranch Chicken Casserole features creamy, cheesy layers of shredded chicken, Ro-Tel tomatoes, tortillas, and Southwestern spices. It’s a comforting and flavorful dish perfect for any occasion.

  • 2 tablespoons butter
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 (10 ounce) cans diced tomatoes and green chilies, undrained
  • 1 (4 ounce) can chopped green chilies
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 4 cups shredded cooked chicken
  • 12 (6 inch) corn tortillas, torn into pieces
  • 1 cup shredded Monterey Jack cheese (for topping)
  • 1 cup shredded cheddar cheese (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt butter in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in the diced tomatoes and green chilies, chopped green chilies, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 5 minutes.
  4. Remove from heat and stir in cilantro, cream of chicken soup, cream of mushroom soup, sour cream, 1 cup Monterey Jack cheese, 1 cup cheddar cheese, and shredded chicken. Mix well.
  5. Layer half of the torn tortillas in the bottom of a greased 9×13 inch baking dish.
  6. Spread half of the chicken mixture over the tortillas.
  7. Repeat the layers with the remaining tortillas and chicken mixture.
  8. Sprinkle the remaining 1 cup Monterey Jack cheese and 1 cup cheddar cheese over the top.
  9. Bake for 25-30 minutes, or until bubbly and the cheese is melted and golden brown.
  10. Let stand for 10 minutes before serving.

Notes

  • For a spicier casserole, use hot diced tomatoes and green chilies or add a pinch of cayenne pepper.
  • You can use rotisserie chicken for convenience.
  • This casserole can be assembled ahead of time and baked when ready.
