Ingredients
- 2 tablespoons butter
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 (10 ounce) cans diced tomatoes and green chilies, undrained
- 1 (4 ounce) can chopped green chilies
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
- 1 (10.5 ounce) can condensed cream of chicken soup
- 1 (10.5 ounce) can condensed cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 4 cups shredded cooked chicken
- 12 (6 inch) corn tortillas, torn into pieces
- 1 cup shredded Monterey Jack cheese (for topping)
- 1 cup shredded cheddar cheese (for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- Melt butter in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
- Stir in the diced tomatoes and green chilies, chopped green chilies, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 5 minutes.
- Remove from heat and stir in cilantro, cream of chicken soup, cream of mushroom soup, sour cream, 1 cup Monterey Jack cheese, 1 cup cheddar cheese, and shredded chicken. Mix well.
- Layer half of the torn tortillas in the bottom of a greased 9×13 inch baking dish.
- Spread half of the chicken mixture over the tortillas.
- Repeat the layers with the remaining tortillas and chicken mixture.
- Sprinkle the remaining 1 cup Monterey Jack cheese and 1 cup cheddar cheese over the top.
- Bake for 25-30 minutes, or until bubbly and the cheese is melted and golden brown.
- Let stand for 10 minutes before serving.

- For a spicier casserole, use hot diced tomatoes and green chilies or add a pinch of cayenne pepper.
- You can use rotisserie chicken for convenience.
