A delightful no-bake dessert that captures the classic taste of a chocolate eclair in a simple, layered cake form. Perfect for a quick, nostalgic treat.

Ingredients

Scale
  • 1 box (about 10.5 ounces) graham crackers
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 3 cups milk
  • 1 container (8 ounces) whipped topping, thawed
  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Line an 8×8 inch baking dish with plastic wrap, leaving an overhang on all sides.
  2. Arrange a single layer of graham crackers on the bottom of the prepared dish.
  3. In a medium bowl, whisk together the instant vanilla pudding mix and 3 cups of milk until well combined and thickened.
  4. Gently fold the thawed whipped topping into the pudding mixture until smooth.
  5. Spread half of the pudding mixture evenly over the graham crackers.
  6. Add another layer of graham crackers.
  7. Spread the remaining pudding mixture over the second layer of graham crackers.
  8. Add a final layer of graham crackers.
  9. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the graham crackers to soften.
  10. While the cake is chilling, prepare the chocolate frosting: In a small saucepan over medium heat, melt the butter.
  11. Stir in 1/2 cup granulated sugar and 1/4 cup milk. Bring to a boil and cook for 1 minute, stirring constantly.
  12. Remove from heat and stir in the vanilla extract and semi-sweet chocolate chips until the chocolate is completely melted and the frosting is smooth.
  13. Once the cake has chilled and softened, remove it from the refrigerator.
  14. Pour the warm chocolate frosting over the top layer of graham crackers, spreading it evenly to cover the surface.
  15. Refrigerate for at least 30 minutes to allow the frosting to set.
  16. Once the frosting is firm, lift the cake out of the dish using the plastic wrap overhang. Slice and serve.

Notes

  • Ensure the graham crackers are completely covered by the pudding mixture for even softening.
  • Allowing the cake to chill overnight will result in a softer, more cake-like texture.
  • The frosting can be adjusted to your preference; add a pinch of salt for a richer flavor.
